Chicken and spring onion mini meatloaf on celeriac mash- Lifestyle Plan Recipe
Ingredients
- 100 g Chicken Breast
- 180 g Celeriac
- 50 g Peppers
- 5 g Spring Onions
- Fresh Ginger
- Cinnamon
- Parsley
Instructions
- Place the chicken with the spring onion, salt, pepper, cinnamon and ginger in a blender and blitz until finely minced.
- Make into 3 mini meatloaves and place in an oven on gas mark 6
- Finely dice the celeriac and boil until soft.
- Once cooked blend in a food processor with salt and pepper until mixed into a smooth puree.
- Finely slice the peppers and sauté in garlic frylite and salt until soft.
- Place the celeriac mash into a bowl... top with the sautéed peppers and the chicken meatloaves.
- Sprinkle parsley flakes over the top (if desired)
