Curried lamb & vegetable stew- Lifestyle Plan Recipe
Ingredients
- 100 g Diced Lamb
- 25 g Red Onion
- 25 g Carrot Diced
- 25 g Mangetout
- 25 g Sugarsnap Peas
- 25 g Greens Sliced
- 25 g Spinach
- 2 cloves Garlic Finely Chopped
- 500 ml Water Mixed With An Oxo
- Coriander Leaves
- Fresh Chilli
- 1 tbsp Each of Garam Masala , Tumeric, ground Cumin, Chilli, Peppercorns
- 2 tbsp Hot Caribbean Curry Powder
- 10 squirts Fry Light
- Salt
Instructions
- sauté onions and garlic in fry light, add in the lamb and brown
- add the spices one by one and add the liquid bit by bit. Bring to a simmer
- dd the carrot and cover for 30 minutes
- add the rest of the veggies and cover for 10-15 minutes until cooked through.
- season to taste and serve with fresh Coriander and chilli
