  • 100 g Smoked Haddock
  • 50 g Spring Onion
  • 300 g Cauliflower Rice
  • 50 g Petti Pois
  • 200 ml Alpro Coconut Milk
  • 2 Eggs
  • 1 Clove Crushed Garlic
  • 5 g Chopped Fresh Ginger
  • 1 tbsp Curry Powder
  • 2 sprays Frylight


  • Poach the Haddock in the coconut milk for 6-8 minutes
  • At same time pop eggs on to boil for six minutes
  • Cool eggs immediately in cold water
  • Gently fry the spring onions in the Frylight for 2 minutes, then add the garlic, ginger and curry powder for a further minute. 
  • Add the cauliflower Ryce and 100ml of the milk used for poaching and stir till liquid soaking up and rice looking curried
  • Pop the petit pois in the pan and keep stirring
  • Drain the haddock from the milk, break it up and stir into the rice
  • Top with an egg quartered and some fresh coriander leaves.
