Pan fried cod on petit pois puree with swede croquettes and thai dipping sauce - Lifestyle Plan Recipe
Ingredients
- 100 g Cod
- 75 g Boiled petit Pois
- 2 Garlic Cloves
- 120 g Swede
- 4 tbsp Soy Sauce
- Slim & Save Lemon Spritz Water Flavouring
- Ginger
- 25 g Fage
- Parsley
- 1 slice Ham
- 10 g Spring Onion
Instructions
Swede croquettes
- Boil Swede until soft then mash into a smooth consistency.
- Cut up 1 slice of ham and 25g spring onions into thin strips then combine with the mashed swede
- Season with salt and pepper then form into palm sized croquettes. Bake in oven until golden brown.
Petit Pois Puree
- Boil petit pois and once cooked blitz in the blender with garlic, parsley, fage and salt and pepper.
Thai dipping sauce:
- Mix the soy sauce, water, lemon flavouring, chilli flakes, ginger, garlic, salt and pepper.
Cod
- Pan fry the cod for 5 minutes on each side on a medium - high flame.
- Season with salt and pepper. Top with chopped spring onion, red chilli and fried garlic
