Stuffed Aubergines - Lifestyle Plan Recipe
Ingredients
- 100 g Turkey Breast
- 75 g Red Peppers
- 1/2 Babybel Light
- 30 g Fage
- 10 g Spring Onions
- 10 g Celery
- Oregano
Instructions
- Place the turkey breast in a food processor and mix until minced.
- Cut aubergine in half and scoop out the flesh and then dice the flesh
- Sautee the Peppers with the aubergine flesh and once soft, add the turkey and cook until brown
- Sautee the Peppers with the aubergine flesh and once soft, add the turkey and cook until brown
- Add the turkey, peppers and aubergine flesh mixture to the aubergine shell.
- Top with 1/2 a grated babybel and cook in oven until shell goes slightly soft. Spray with frylight if it starts to dry.
- Prepare a side "creamy salad" by finely slicing the celery and spring onions. Combine with Fage and salt and pepper.
