Ingredients
 

  • 100 g Turkey Breast
  • 75 g Red Peppers
  • 1/2 Babybel Light
  • 30 g Fage
  • 10 g Spring Onions
  • 10 g Celery
  • Oregano

Instructions

  • Place the turkey breast in a food processor and mix until minced.
  • Cut aubergine in half and scoop out the flesh and then dice the flesh
  • Sautee the Peppers with the aubergine flesh and once soft, add the turkey and cook until brown
  • Sautee the Peppers with the aubergine flesh and once soft, add the turkey and cook until brown
  • Add the turkey, peppers and aubergine flesh mixture to the aubergine shell. 
  • Top with 1/2 a grated babybel and cook in oven until shell goes slightly soft. Spray with frylight if it starts to dry.
  • Prepare a side "creamy salad" by finely slicing the celery and spring onions. Combine with Fage and salt and pepper.
